L'Auberge le Floris, cuisine with southern accents

Ah, dear, I've never been able to overcome the sin of being a gourmand so, when Claude Legras invites us to dine at his table, it is absolutely impossible to refuse!

Especially since the man is the image of his cuisine: inventive, warm and mischievous!  

Daring to make an emulsion of Tagada strawberries (yes, that's right!), or sugared almonds to temper the bitterness of grapefruit preserves is just not in the repertoire of a fledgling cook!

Claude Legras delights our taste buds and succeeds in amazing us with the personality of his dishes, in terms of taste, certainly, but also in terms of presentation.  Inspired by the flavours of the South, a frying pan full of squid and chorizo ravigote sauce (a vinaigrette with herbs and hard-boiled eggs) is enough to project you right into the heart of Séville!

Sacré Meilleur Ouvrier de France, awarded 17/20 by Gault and Millau and even honoured with the distinction of a Michelin star, Claude Legras has known how to conserve the family spirit of l'Auberge which, since its opening in 1997, has become a veritable small enterprise!  

But l'Auberge du Floris is not only a place for gustatory discovery.  It's also a place for reverie, and for quiet daydreaming. It is impossible not to succumb to the enchantment of its terrace, embellished with olive trees, in mediterranean style. 

Once you find yourself with a glass of champagne in hand, enjoying the spectacular view of the sparkling waters of the lake at sunset, while some snacks at your fingertips offer you the beginnings of gastronomic bliss,  -- then you'll find yourself approaching Nirvana!
